In the cellar, modern technology combined with the owners passion, ensure a production of top quality wines. Upon arrival to the cellar, the grapes are chilled in the refrigerator for 8/10 hours, reducing their temperature in order to preserve their characteristics and prevent oxidation. During the fermentation process, the temperature is constantly monitored. In the cellar there are barrels made of the finest quality woods, chosen purposefully to suit and enhance the delicate characteristics of the wines inside them. In the final step, the bottling process, great care is taken. The bottles are stored in metallic crates in thermo-conditioned rooms, before being labelled, completing the refinement phase inside the bottle.
